I love finding simple recipes for all our fabulous summer Farmer’s Market finds. We love to scour our local market for squash, zucchini, cucumbers, greens, okra, tomatoes (of course), and Georgia favorites, peaches! The kids will just eat them like apples, but I like to find more creative ways to use them. So imagine my delight when I came across this recipe from Mark Bittman of the New York Times that I had saved (and printed out!) ages ago. So while the kids were with my parents last week, Scott and I had the perfect summer meal- grilled chicken with peach and tomato salad. And I thought I’d share the salad recipe with you today!
And when I say “recipe,” it’s much more like an ingredient list, and then you adjust to your liking. So here’s what you need:
Fresh Lemon Juice
Crushed Red Pepper Flakes
And here’s all you do:
-Cut the tomatoes into eighths, and then cut the eighths in half. Add them to a salad bowl.
-Peel the peaches and cut into small pieces and add to the tomatoes.
-Cut your red onion into very thin slices (add little bits of onion at a time, and add more if needed. Raw red onion can be pretty intense if you add too much), and add to the tomatoes and peaches.
-Drizzle with olive oil and lemon juice, sprinkle with crushed red pepper and salt. All finished!
Tomatoes and peaches together sounds pretty strange, but TRUST ME on this one- it’s delicious! And is a perfect summer side with fresh, local vegetables and grilled chicken or steak. Let me know if you try it out and what you think!
So, last week was pretty much the first week this whole summer that I actually created a meal plan like normal. Meal-wise, this summer has been so laid back and much more last minute than ususal, which is fine during the summer, but pretty much impossible (for me) during the school year! But, I LIKE, like actually ENJOY meal planning, so I’m hopping back into my meal planning routine again this week. And it feels good! So here’s what we’re having this week:
Monday: Stuffed Bell Peppers and Broccoli
Tuesday: Meatloaf, Green Beans, and Roasted Cauliflower
Wednesday: Buttermilk Marinated Roasted Chicken with a Chopped Salad
Thursday: Banh Mi Rice Bowls
Friday: French Bread Pizzas
