Weekend Recap + Weekly Meal Plan

Happy Monday, friends! How was your weekend? Anything fun? We had a pretty regular weekend, but it was great. I don’t know what it was- if the stars were aligned, or I just wasn’t super stressed , or everyone was just in a great mood, but we just had a great weekend!

Saturday we all took our time getting up, which is always so nice. Scott and I have a kind-of unwritten weekend routine- since I get up and get the kids ready for school, and breakfast made, and taken to school every day during the week, he gets up and makes coffee and gets the kids’ breakfast made on the weekends. It’s a (slightly unbalanced) compromise that I quite enjoy, since I am happy to take advantage of any and every opportunity to sleep late! #nightowl So he got the kids all set and then was off for a round of golf with a business colleague.

The kids and I took it easy- the girls played Barbies, Ben played with his Legos, and I did a bunch of laundry and a bit of sewing (pattern test reveal coming soon!). Then it was time to get out of the house and get outside! We had a crazy weather weekend- after snow predicted early last week (we did NOT get snow), it was 64 degrees on Saturday! Brantley had softball evaluations, so we headed to the ballfield. Ben and Gracie met up with their little friends and played on the playground (and in the dirt) while Brantley did her softball thing. I love watching her play softball, but it also means our beloved lazy evenings are about to be taken over! After she was done, we took Ben to get his long hair cut “just like Daddy,” and what a difference!

Then we headed to the grocery store to get some things for dinner, and after a couple of rough grocery store trips with all three kids, they were SO GOOD and even got me a few compliments from store employees about how well behaved and sweet they were. #momwin Soooo, they got candy as a reward, ha!

We headed home and they kids played outside some more while I did some more organizing! I really am working through every room, slowly but surely, and I am going to get this house decluttered this year. I emptied out the kids’ craft and game closet (a converted hall/linen/coat closet) and it’s so nice and straight and clean. It makes me feel lighter and truly declutters my mind AND my home! My closet is still perfectly straight after cleaning it out last week, and it makes me feel SO GOOD every time I walk in there. I really do think that decluttered spaces improve the energy and the positivity in your house, and I know it’s totally true for me! Scott got home, we ate a simple dinner, the kids got baths, and we had a laid back evening. We watched First Man, which was really good and sad and inspiring, and I give it two thumbs up.

Sunday morning was typical- got up in plenty of time for church, then hurried up in a rush to leave on time to just get there early, ha! We have had some amazing services the last few weeks, and I have left so, so inspired, and today was another one. Afterwards, we headed to Frontera for a Mexican lunch! In the past we rarely go out to lunch after church, but in the last few months, we’ve made it a bit of a thing since the kids are big cheese dip fans (me and the girls DESTROYED a bowl today), but also because they are pretty well behaved while we eat, and Scott and I can actually enjoy lunch with them instead of battling with them, cleaning up after them, and refereeing (we still do a bit of that).

We got home and I ordered our groceries, watched a few more episodes of Tidying Up to get me inspired to tackle my dresser! I don’t fold a lot of my clothes at all- just my undergarments, t-shirts, pajamas, and workout clothes. But when I cleaned out my closet last week, I left out my dresser (I had PLENTY to deal with in my closet alone!). So I emptied my dresser and got rid of a good amount of old t-shirts and ill-fitting pajamas. I also refolded everything vertically that I was keeping so that when I open a drawer, I can see every last thing that’s in there. It’s brilliant and makes sense and makes me SO HAPPY. See! Positive energy!! I cannot wait to tackle every last room in the house. Except Ben’s room. That is gonna be a MESS, haha. But seriously. A Mess.

Then it was Super Bowl time! Did you watch? Honestly, you won’t find a bigger college football fan than me. But pro football?? I can take it or leave it. And Super Bowl snacks?? I’m ALWAYS in. Since we practically ate out weight in cheese dip at lunch, we skipped the Velveeta and Rotel and I made ham and cheese sliders, Ranch Dip, Spinach Dip, and 7-Layer Mexican Dip. And the snacks were definitely the best part of the game, ha! I like Maroon 5 just fine, but the halftime show was lame, I am NOT a Tom Brady fan (told Gracie about Deflategate and she chanted “Brady is a CHEATER!” all through the game. #proudmom), and the Rams let us all down. There were some good commercials- Kia, Microsoft (the video game one– were you UGLY CRYING like me??), Google’s “jobs for vets” (Scott knew exactly what the numbers were and it made me tear up), the first responders ads, the Stella Artois ad (with Carrie Bradshaw!), and I loved the NFL 100 one with all the players! It wasn’t a great game but at least the food was good and we still had fun!

And that was about it for our tame but good weekend! We were able to enjoy each other’s company, get outside a bit, relax, be productive, and eat fun snacks. Hard to beat that!

We’ve eaten a lot of heavy food and snacks lately, so I’m lightening it up a bit this week. Here’s what’s on our dinner menu:

Monday- Roasted Salmon with Broccoli and Cauliflower
Tuesday- Ultimate Chopped Salad with Bread
Wednesday- Old Fashioned American Goulash (taking to church for our small group!)
Thursday- Mexican Chicken, Rice, and Lime Soup
Friday- Pork and Green Bean Stir Fry with Rice
