What’s in My Cart + Weekly Meal Plan

Am I the only one or does anyone else have a million things sitting in their Amazon shopping cart pretty much at all times?? Anytime I’m browsing and I find something I like, I just add it to my cart and when it’s time to actually order the things I need, I “save for later” all the frivolous items until next time. Today I’m sharing just a couple of the things I have in my Amazon cart that I’m waiting for just the right time to snatch up!

LuminoLite Rechargeable Book Light
I have been reading in bed most nights the past couple of weeks (this book!), with the light of the flashlight on my phone leaning up against my face. This rechargeable book light that clips onto your book will be so much better!

V-Neck Curved Hem Blouse
I might need this blouse in every color. Perfect alone or as a base layering piece, versatile enough to dress up or down!

Three-Bag Laundry Sorter
You know you’re getting old when you see a laundry sorter and think, “oooh, I’d LOVE to have that!” But laundry at our house can get a bit out of control and I like the idea of it being separated from the get go.

I can’t resist a striped top, but one with a peplum??! Gonna be ordering this one very soon.

52 Lists Project Journal
If I can commit to any weekly journal, I have a good feeling that a list writing journal is the most realistic! Need to grab this one soon too!


First meal plan of the new year! I’m trying to plan healthy, quick, easy, uncomplicated, veggie-heavy meals, but it took me forever this week to figure out what we were going to have. Now, I admit I do enjoy meal planning, but not when it takes me HOURS to complete! What I think I’m going to do going forward is create my meal plan based on categories. So think about the week, and decide on a Meatless Monday, Taco Tuesday, Soup on Wednesday, Asian on Thursdays, etc… Then as I make dinners that we all really enjoy, I keep a running list of our favorites on my phone, divided up by those categories. So when I’m planning Monday’s dinner, I’ll go to my Meatless dinner list and pick a meal. Then Tuesday, I’ll look at my taco recipes and choose one for that evening. I’m hoping that will help me narrow down my options, and make meal planning a bit easier for the week!

SO! With all that being said, here’s what we’re eating this week (and a bit of this past weekend too):

Friday: Roasted Salmon, Steamed Broccoli, Roasted Potatoes (shown above)
Saturday: Chili and Cornbread
Sunday: Roasted Chicken, Asparagus, and TJ’s Cauliflower Gnocchi with Mushrooms and Spinach
Monday: Crockpot Creamy White Chicken Chili
and Skinny Southwestern Dip with Tortilla Chips and Veggies
Tuesday: Migas with Black Beans
Wednesday: Chili at Church with our Small Group
Thursday: Cauliflower Soup
Friday: Lasagna Rolls with Caesar Salad
