Last night we grilled up some steaks, and I roasted some squash, sauteed some mushrooms, and made the best kale salad to eat on the side. It’s so easy, with only a few ingredients, and really is so, so good that I could eat the whole bowl. It kind of creates its own dressing, and even if you’re not a huge fan of kale, this one is worth a try. I thought I’d share it with you today!

The Best Kale Salad Ever
Only a few ingredients and a couple of minutes make for the most flavorful kale salad you’ve ever tasted!
Ingredients
- 1 bunch lacinato kale (really any type of kale works fine)
- 5-6 peppadew peppers
- 2 tbsp pesto
- extra virgin olive oil for drizzling
- freshly grated parmesan cheese
Instructions

Remove the stems from the kale, and chop into small strips. Massage the kale strips in your hand just a moment to begin to tenderize the kale. Add kale to a large salad bowl.

Dice the peppers into small pieces and add them to the kale, along with the pesto. Drizzle any juice from the peppers in over the kale and a bit of olive oil. Mix to combine the kale, pesto, and peppers, season with salt and pepper to taste. Top with freshly grated parmesan just before serving.
