Hello friends! Happy Monday! I hope y’all had a wonderful weekend and are ready for the week ahead (though I am never quite ready for Mondays, ha!).
We made a fun trek to Athens after church yesterday to go to my favorite place- Trader Joe’s! We need quick and easy dinner ideas during this season that we’re in, and TJ’s has SO MANY great frozen or quick-cook options. I had already planned my dinner menu for the week, but definitely made some adjustments since I knew there were so many yummy products that I really wanted to get that you can’t find other places! Today I want to share some quick and easy dinner “recipes” if you need to get dinner on the table for your family before you head off to practice, church, and all over the place just like us!
Chicken Fried Rice and Dumplings
Some nights, all I have time (and energy) for is heating something up quickly before we have to hustle out the door to sports or other activities! So why not make it tasty?! TJ’s frozen chicken fried rice is good, cooks quickly, and is kid-friendly. Throw in some dumplings and dinner is ready in like 15 minutes, tops!! TJ’s has a great variety of wontons and gyoza and dumplings- we’re going with the chicken and cilantro and Thai shrimp ones this week.
Chile Lime Chicken Burgers with Guacamole and French Fries
Originally, I had hotdogs with fries on our meal plan for one of the nights this week. Some nights you just have to call it in and take the easy way out. But these chile lime chicken burgers are also the easy way out! Warm them up in the skillet while the fries are cooking in the oven, top them with guac, lettuce, and some red onion, and dinner’s ready in 20. Easy! And delicious!
Baked Rigatoni with Caesar Salad
Thursdays and Fridays we are not in as much of a rush to fix dinner since we don’t typically have activities, but I am still not interested in spending a lot of time in the kitchen after a long day. But I can boil some pasta, add some sauce and ricotta, top it with mozzarella, and pop it in the oven! I’ve had the pumpkin and butternut squash pasta sauce for some time, but I grabbed the pasta, ricotta, and mozzarella from TJ’s to make the pasta bake for dinner. And I’ll serve it with an easy Caesar salad mix. Easy!
Mediterranean Lentil Salad with Hummus
This last one is not so much of a family dinner option, but could definitely be a great lunch option! I’m going to mix the steamable lentils with TJ’s Bruschetta sauce (and maybe add some feta) for a one-minute lentil salad to eat with pita crackers! Add some hummus (we’re eating the Mediterranean hummus this week, but the horseradish flavor is my favorite) and maybe some carrots and cucumbers, and that’s a protein packed meatless lunch! Done in 5 minutes.
