Hello friends! I hope you all had a wonderful weekend! We were able to relax for a bit and recharge our batteries. Onto another busy week! All fall sports will be kicking into full gear this week as Ben starts flag football, Gracie resumes gymnastics, and Brantley continues her third season of softball.
And I am resuming my Meal Plan Monday posts today! During the summer all our plans and schedules are pretty lax, and so was my meal planning, ha! I didn’t feel like cooking as much, we had lots of nights of “find something in the fridge” or “snack plate dinners,” that weren’t exactly blog-worthy! But as we get back into our routine with school and sports and schedules and planning, the meal plan is an absolute necessity for us. So here we are! And here’s what we’ll be eating this week:
Monday- Thai Chopped Chicken Salad with Peanut Butter Dressing
Tuesday-Jalapeno Turkey Burgers with Salsa and Cumin Roasted Zucchini and Cauliflower
Wednesday-Amish Cabbage Skillet and Green Beans
Thursday– Sheet Pan Mahi Fajitas (pictured above) with Cilantro Lime Cauliflower Rice
Friday- Roasted Carrots, Beets, Asparagus, Brussels Sprouts, Zucchini, and Kale Salad
Saturday- Zoodles with Mushrooms, Garlic, Spinach, Eggplant, Tomatoes, and Tomato Sauce with Poached Eggs
Sunday- Stir-Fried Chicken with Broccoli, Mushrooms, Cabbage, and Zucchini with Cauliflower Fried Rice
