I am the worst at having the greatest gift-giving intentions, and then, uh-oh, it’s three days before the big day and I haven’t bought a thing. Though I really do enjoy it, I’m finding that I have less and less time to devote to meal planning and that the Blue Apron and/or Home Chef boxes work pretty well for us! It decides three meals for me ahead of time (I typically plan to order a box or skip the shipment based on meal options several weeks in advance), so I only have to decide on three or four meals and shop for those ingredients (online shop, I should clarify) once a week. I’m thinking about trying one more (Marley Spoon or Hello Fresh??) so I have three different box options every week. Really the only reason now that I will skip a box for the week is when none of the meal options sound appealing, but I don’t want to subscribe to too many services and have too many to manage. Either way- we don’t have a box coming this week (boo), but we’ll be having some good dinners anyway! Here’s what we’ll be eating this week:
Sunday– BBQ Ribs, Corn on the Cob, Roasted Okra, Seared Asparagus
Monday– Shredded Brussels Sprouts and Sweet Potato Chopped Salad with Frech Bread
Tuesday– Udon Noodle Vegetable Stir Fry
Wednesday– Zucchini Ravioli with Red Lentil Rotini
Thursday– Blackened Tilapia with Roasted Broccoli and Sauteed Squash
Friday– Shrimp and Quinoa Poke Bowl
Saturday– Mushroom and Spinach Quesadillas with Chips and Mexican Layer Dip
