Easter Leftovers, Repurposed

If you’re anything like me, you may or may not have about 13 various tupperware containers full of Easter leftovers in your fridge.  My mom and I made tons of food, and as usual, there was plenty leftover!  And like my dad and I were discussing, eating leftovers is a good thing when you had a really great meal that you want to partake in for a second (or third!) time.  But eating leftovers is not nearly as fun when you’re eating them because you have to or they’ll spoil.  So we may eat one day’s worth of leftovers Easter dinner-style, recreating our holiday plates, but then I get restless and want something different.  And instead of letting the leftovers go bad in the fridge, I try to reimagine the dishes into a new meal, a la Chopped!  It stretched all the leftovers into new meals over the course of the week, and with just a few additional ingredients, you have completely new meals.  Here are a few ideas on how you can use up those leftovers without dying of dinner boredom throughout your week:

Ham
-Ham and Vegetable Soup- Simmer your hambone with chicken or vegetable broth, add in leftover ham, chopped up, and canned (or fresh, if you have it leftover!) diced tomatoes, corn, carrots, peas, green beans, okra, potatoes, whatever you like.
-Ham and Potato Soup- Simmer potatoes until soft (or use leftover mashed potatoes!) and mix with chicken/vegetable broth.  Blend potatoes and broth until smooth and a soup .  Mix in chopped ham and a bit of shredded cheese.
-Ham and Cheese Flatbread- Top naan or flatbread wrap with chopped ham and shredded cheddar or your favorite cheese.  Put under the broiler until cheese melts.  Fold over to eat or cut it up like pizza!

Asparagus
-Mix into risotto with mushrooms for an easy one-dish meal.
-Toss with cherry tomatoes and cheese ravioli and pesto sauce
-Mix with mushrooms, cheese and eggs for a spring fritatta!

Deviled Eggs
-Just eat them for a snack! Haha!
-Or, chop up the eggs and make egg salad.  Spread the egg salad on the bottom half of King’s Hawaiian rolls and top with ham and the bun for mini ham and egg salad sandwiches!

Green Beans
-Add to the ham and vegetable soup!
-Toss them into a Three-Bean Salad
– Add to a super screaming hot pan with a bit of oil and a splash of soy for just a minute or two.  Serve them alongside rice and chicken for an easy stir-fry.

Macaroni and Cheese
-Again, just eat it!  So good!
-Or, scoop it out of the casserole cold, and roll into balls.  Coat in egg and breadcrumbs and fry for mac and cheese balls!

Mashed Potatoes
-Scoop cold mashed potatoes into balls and flatten into pancakes and fry in saute pan for mashed potato pancakes!
-Use mashed potatoes to make potato soup as mentioned above!

Corn
Add into vegetable soup as mentioned above
-Make corn and potato chowder with leftover corn and mashed potatoes
-Mix into cornbread

Fruit Salad
-Mix with a frozen banana and almond milk or fruit juice and blend for smoothies!
-Sprinkle a bit of sugar over the top of leftover fruit salad, and use to top a poundcake or cheesecake or sugar cookie tart
