Marinated Olives

We love snack trays in our house.  Cut up veggies, some crackers, cut up apples and grapes, nuts, hummus, cheese or other spreads, and pickles make for a perfect snack for the kids after school or for a happy hour tray for the adults!  We’ve even put them together for super easy “serve yourself” kind of lunches or dinners on the weekends.  And I have one new addition to the trays- Homemade Marinated Olives!

Now, you’ve all seen the amazing olive bars in your local grocery stores- with a wide variety of tasty marinated roasted red peppers, olives, mushrooms, feta, and so much more that you can easily scoop out and add to your cart, but WHOA…they can be SO EXPENSIVE!! For just a little plastic container!  They’re yummy, and I love having those options on our snack trays too, but avoid them most of the time because they’re just too pricey.  And I definitely avoid them now, because I have learned to make my own and they’re DELICIOUS!  And you can customize them to taste perfectly to your liking and make your favorite combinations so easily.  Don’t like black olives?  Keep it all green!  Want to add some variety?  Add some canned mushrooms like I did last week and make a great pickled mushroom and olive combination!  The options are endless.  Plus, you don’t have to be precise with the spices.  Add a bit of rosemary or herbs de Provence for a different taste. Don’t have oregano, but you have Italian seasoning?  Perfect! Want some extra spice?  Add extra red pepper flakes!  You can really adjust the spices to suit your own tastes.  Get creative!

And since it’s Friday, and perhaps you have a little cocktail hour planned in the comfort of your own home, I thought I’d share this recipe, especially since you may already have all the ingredients in your pantry!

Marinated Olives
(adapted from this recipe)

Three 15 ounce cans of olives or other vegetable combination (green! black! kalamata! artichoke hearts! mushrooms! roasted garlic cloves! sun-dried tomatoes! banana peppers!)
2 Tablespoons Olive Oil
1/4 Teaspoon Garlic Powder
3/4 Teaspoon Oregano
Red Pepper Flakes, to taste
Salt and Pepper

Drain your olives (I don’t rinse them though, I like to keep some of the brine on them!).  Pour your olives/vegetables into a large bowl.  Drizzle olive oil and spices over the olives/vegetables and stir to combine and coat.  Season with salt and pepper.  Store in an air-tight container in the fridge, and enjoy!
