Lutons Lately + Weekly Meal Plan

Hello Friends!  I hope you had a wonderful weekend!  We spent our time cleaning the house, relaxing, getting a lot of work done, and getting these kids ready to go back to school today!  Today I thought I’d share what’s been going on around here lately, and what we’ve been up to.

Last weekend we headed to Columbia, South Carolina, for a Luton family reunion!  We joined my in-laws, brothers and sisters in law, all the cousins, my husband’s aunts and uncles, extended cousins and their kids for a fun day with lots of good conversation, great memorabilia, and wonderful family time!

With MLK Day on Monday and THREE SNOW DAYS this week, the kids were only in school on Tuesday, and were home the rest of the week!  We got snow on Wednesday and were able to enjoy it for about 5 minutes, haha!  The kids were just not prepared for how cold it really was, and they walked through the snow a bit, slid down the hill once, and were ready to go back into the warm house by the fire!  I don’t blame them- the snow doesn’t impress me much, ha!  But it was a fun 5 minutes!

Spring sports sign ups are upon us!  We asked the kids what they wanted to do this spring, and what they wanted to play.  As much as we love sports in this household, and as active as the kids love to be, it has been SO NICE this winter to not have activities in the afternoons.  I will miss our laid back weeknights once practices start up!  Brantley LOVED playing softball in the fall, and so I was excited that she wanted to play softball again in the springtime.  Scott enjoyed coaching, and I enjoyed watching!  Bennett has played baseball for the past two seasons, decided that he wanted to play soccer in the spring!  He played soccer a few years ago at our church, and we’re going to play there again this season.  Practice one night a week and games Saturday mornings will definitely be manageable.  And our sweet Gracie is going to try out gymnastics this spring!  She’s tried soccer and softball, and she doesn’t really have a passion for either.  We have noticed, though, that she LOVES dancing and thought that she might like to take dance lessons!  But when I suggested dance or gymnastics, she decided to go with the latter.  The gym is really close to our house, and once we find out Ben and Brantley’s practice schedules, I’m going to sign Gracie up for a gym class on whatever day isn’t already taken!  We will definitely be busy, with three kids in three different activities, but I think they’re going to love it!  And Scott and I are going to be exhausted, ha!

This past week, I was chosen to be a pattern tester for one of my favorite sewing pattern designers, See Kate Sew.  I’ve tested several patterns for her in the past, and it’s always a really fun and challenging process.  This particular pattern is a knit top with a cute shoulder ruffle detail.  I can’t wait to share the finished product, and a couple of my versions when it is released!

I have been dying to try this super easy bagel recipe for a while.  And since we didn’t have to be up early this week, and I had all the ingredients on hand, I went ahead and tried it out!  It was definitely very easy, and not too bad!  My bagels didn’t rise quite as much as I was hoping (my self-rising flour is pretty old, though, so I bet with a new bag of flour might help), but they were still good.  I’m definitely going to try them again soon.  Folks are even using the bagel dough as pizza dough which sounds like a fun experiment too!

Have you been listening to the new podcast, Atlanta Monster?  It’s hosted by Payne Lindsey, the same guy that produced Up & Vanished about the Tara Grindstead murder.  Atlanta Monster is about the murders  of dozens of African American children, mostly boys, in Atlanta in the early 1980s.  A very interesting weekly true crime podcast, and I’m totally captivated!  I only wish I could listen to all the episodes back to back instead of waiting a week in between each one!

We liked the Blue Apron meals so much from a few weeks ago, that I’m considering using Blue Apron or some other meal delivery service a few weeks a month.  In combination with the grocery delivery service we already use (Instacart), it will make meal planning and grocery shopping a snap!  But I wasn’t crazy about the meal selections this week, so we’re recycling some old favorites for dinners.  Here’s what we’re planning on eating…

Monday- Roasted Cauliflower Soup with Garlic Bread
Tuesday-
Salad Tacos and Mexican Street Corn
Wednesday-
Mushroom, Broccoli, and Zucchini Fried Rice and Egg Rolls
Thursday-
Buddha Bowls with Roasted Carrots, Beets, Brussels Sprouts, Couscous, Chickpeas, Kale, and Tahini Goddess Dressing
Friday-
Salmon Cakes, Macaroni and Cheese, and Green Beans
