Hello Friends! Can you believe that Christmas is TWO WEEKS FROM TODAY?? **Cue stress and anxiety levels to skyrocket.** This season is flying by unlike any year in the past. I am trying my very best to savor it and slow down a bit, but it’s SO HARD. But we did have our first family Christmas with the Luton side this past weekend, and we were able to relax and just hang out with family, and let the kids play with their cousins which was really nice.
We got home from Aiken Sunday afternoon, and then headed to church for the Coming Home for Christmas program! The girls weren’t feeling up to it, so I took my boy Ben as my special Christmas date! We had such a good time. He even blessed the food in front of the ENTIRE group, and was quite the little superstar! We sang Christmas carols, ate a good dinner, and I may have even been forced to go up on stage to participate in acting out the 12 days of Christmas with 11 other unlucky souls. And there may or may not be video evidence of the abomination out there somewhere… But we had a wonderful time, and it was so nice to spend a little one on one time with my favorite little boy. It doesn’t happen often anymore!
And now we’re ready for a super busy week before we celebrate with my side of the family this weekend! There’s LOTS of Christmas celebrating left to do around here! We’ve basically just begun!
News Flash: eating healthy can be really tricky during the holidays. But a friend of mine said something years ago that I try to apply to my holiday eating. On a normal day/week/weeknight, eat healthily. Eat clean, watch your carbs, eat your greens, etc. So that when you go to a party or have a holiday dinner, you won’t feel nearly as bad about indulging! But if you’re eating all the Christmas cookies all the time, it can get a bit out of control (and quickly, in my experience!). So during the week, we’ve been eating light breakfasts and lunches, and veggie-based dinners, and when we visit family on the weekends or go to a holiday party, we eat those chicken wings, dammit! And we have fun celebrating, but don’t go crazy for a month straight, ha! So with that being said, here’s what we’re having for dinner this week:
Monday- Tilapia Taco Bowl with black beans, salsa, corn, rice, avocado, and cilantro
Tuesday- Rolled Tacos with Avocado Dipping Sauce (shown above)and Mexican Street Corn Salad
Wednesday- Asian Garlic Tofu, Rice, Roasted Broccoli and Mushrooms
Thursday- Crock Pot Black Eyed Pea Soup with Cornbread
Friday- Headed to Blue Ridge!
