Scenes from Thanksgiving + Weekly Meal Plan

Hello Friends!  I hope you had a lovely Thanksgiving break, with lots of good food, tons of good family time, and maybe a pajama day (or two).  We were able to spend time with family- we were in Blue Ridge last weekend and in Aiken early last week- and then were able to spend the rest of the week at home, just our little family of five.

When I was growing up, we spent most holidays with just our immediate family, since my grandparents and aunts and uncles and cousins lived several hours away.  And those holidays always felt so calm and special and intimate because it was just the four of us and we were able to create our own traditions and spend such wonderful time together.  And as busy and crazy and unpredictable our life has been lately, Scott and I try to take time out during the holidays to really relax and focus on each other, and create that same sort of calm, special, laid-back holiday feeling with our kids.

So here are some scenes from our Thanksgiving break– a great week with great family times, good food, and priceless memories made.

Ta-dah!!  Happy Thanksgiving, friends!  Now onto Christmas!


After two Thanksgiving dinners, lots of leftovers, and plenty of indulging in between, it’s gonna be a much lighter week, dinner-wise! Here’s what we’ll be eating this week:

Sunday- Roasted Cauliflower, Carrots, and Zucchini, Sauteed Kale, Butter Beans, and Cornbread
Monday- Spinach and Artichoke Twice Baked Potatoes (shown above- yum!), Green Beans, and Roasted Carrots
Tuesday- Black Bean, Corn, and Rice Soup
Wednesday- Black Bean Burgers, French Fries, and Marinated 3 Bean Salad
Thursday- Vegan Alfredo with Broccoli and Mushrooms with Caesar Salad
Friday- Vegan Italian Sausage with Sauteed Onions and Peppers with Mashed Potatoes
