Hello Friends! I hope you had a wonderful weekend! We wrapped up our fall ball season (can I get a HALLELUJAH!) and knocked out one team party on Saturday, then I taught Sunday school at church Sunday morning, cooked, got some laundry, cleaning, and decluttering done, then had a potluck dinner at church and choir practice Sunday night. I’ve hardly had time to sit down! But alas, here we are on Monday, and it’s back to the grind.
I see so many hilarious and very relatable memes every day, and thought it would be fun to share them here for a new series called Memes for Monday! If I’m being very honest with you, we have had a tough time staying on our plant-based vegan(ish) diet lately. Ever since we got back from Disney, we have eaten vegan at home for the most part, but definitely not when we’ve gone out to eat or been away from home. The ball fields have been brutal (nachos are my forever weakness)! And we have had a particularly tough past couple of weeks, and convenience eating has taken its toll. So with all that in mind, I’m sharing a few food-related memes this Monday. Enjoy!
My goal is to get back in the vegan routine this week, and a solid meal plan is the first step for us! So here’s what we’ll be eating this week:
Sunday- Roasted Red Pepper Pasta (SO GOOD and one of our favorites. Shown above from last night!)
Monday- Roasted Balsamic Vegetables with Kale Quinoa
Tuesday-Mexican Spaghetti Squash Boats (sub ground turkey for soy crumbles)
Wednesday- Indian Curry Lentils with Squash, Zucchini, and Rice
Thursday-Roasted Tomato and Basil Soup with French Bread
Friday-Mushroom Bourguignon with Roasted Potatoes
