Mondays are no joke when you are recovering from a busy weekend and coming down with a cold! Ugh. Ben started running a fever on Saturday night, and by early Sunday evening, I knew that I was getting it too. Luckily, no fever for me (so far, at least. Fingers crossed!), just congestion, scratchy throat, headache, and achy body. Happy fall- the allergies have arrived! So my diffuser is practically pumping right into my face, and I am drinking hot green tea and water by the gallon while trying to take care of Ben and myself, and not get anyone else sick in the process! Hello Monday, indeed, but can I have Sunday back, please?!
Anyway, I’m just sharing my weekly meal plan today, keeping things short and sweet. I have had several questions about how the kids are adjusting to a (mostly) meat and dairy free diet, and I am so proud to say that they are doing amazing! So much better than even I expected. Now, they are not 100% vegan, and neither are Scott and I. The kids are still eating eggs and some cheese, they had a regular cheese pizza last night (mine and Scott’s were vegan), and they are still having some snacks and ice cream and other things here and there. But we all eat the same thing for dinner, and I told a friend the other day that they are eating more and eating better now than ever before! They are even choosing healthy snacks on their own, and love vegetables. I think changing from a regular diet to a vegan diet would be tricky if you have picky eaters, but mine were not too picky to start with. But, I will say, that Brantley had several things on her “will not eat list” prior to the diet change (tomatoes, asparagus, beets, zucchini, and mushrooms) that she loves now, actually requests, and eats regularly. It’s expanded their food horizons and I am so proud that they are open minded and willing to try new things!
Here’s what’s on the menu for this week:
Sunday- PIZZA! We tried vegan pizza for the first time and it was pretty good!
Monday- Greek Salad Bowl with Tomato and Cucumber Salad, Quinoa, Marinated Chickpeas, Kale, Hummus and Baba Ganoush (shown above- so excited to make these!)
Tuesday- Dan Dan Noodles and Spring Rolls
Wednesday- Roasted Red Pepper Pasta and Mixed Green Salads
Thursday- Mexican Quinoa Stew with Grilled “Cheese” Sandwiches- Trying out vegan cheese slices in our sandwiches…will report back how they tasted!
Friday-Spicy Cauliflower Stir Fry with Zucchini and Rice
