July Favorites + Weekly Meal Plan

CAN YOU EVEN BELIEVE TOMORROW IS AUGUST????  iIt blows me away that tomorrow is the last day of our summer break, and the kids will be going back to school on Wednesday.  It’s definitely bittersweet for me- I am ready for a return to routine and schedule, but I love the laid-back summer days and will miss the kids when they’re at school (even though they drive me bananas sometimes).  More than anything, I am sad that they are growing so much and are not babies anymore.  It’s nice because they’re so independent, and I feel like we’re easing into the “sweet spot,” that beautiful in between of life and parenting where the kids are old enough to do a lot for themselves, but still think you’re super cool and love to be with you.  Anyway, I’m getting off-topic, haha, I’ll talk more about our summer and school starting back tomorrow!

Today I’m sharing my July Favorites!  I started this monthly feature just last month, to highlight a few things that I have liked, enjoyed, watched, bought that might be worth passing along!  So here are my favorites for this month:

Mexican Street Corn Tostadas- We are still rocking the meat and animal product-free diet (for the most part), and really loving it.  With the abundance of summer vegetables, and the increasingly curious and adventurous palates of the kids, we have been able to try lots of different recipes with ease (I give a HUGE credit to the kids– they have really been awesome about all the new foods and recipes and talk regularly about how much they love eating healthy!!).  This Mexican Street Corn Tostada was a super easy dinner- I cranked it out with about 20 minutes to spare before we had to head to baseball/softball practice last week.  It was delicious, and you can use either canned corn if you’re super short on time, or fresh corn (I used fresh corn and it’s still really fast- just pop the corn, husk and all in the microwave for two minutes, then remove and cut the kernels off the cob!  Simple!).  To make it totally vegan, use vegan mayo and omit the cheese (we’ve eaten it both ways, and it’s great with or without the cheese), and serve it on its own or with some Mexican coleslaw for lunch or dinner.  So good and so easy!

Gold Target Flatforms- If you’ve followed my What I Wore posts recently, you’ll know that I LOVE these new flatforms from Target! I have worn them with pretty much everything lately because they are comfortable, but also give me a few extra inches!

Lion- SUCH A GOOD MOVIE!  It is rare that I sit and don’t multitask while watching a movie, but I couldn’t take my eyes off this one.  So, so good.  And a true story!

Ozark- We started a new show last week- Ozark on Netflix.  Jason Bateman is a dirty financial planner who gets into some trouble and has to leave Chicago with his family (and wife Laura Linney is great), and heads to the Ozarks.  He is not a great guy since he’s knowingly laundering money for a Mexican drug cartel, but you can’t help rooting for him!  Definitely worth checking out.

Faded Glory Denim Boyfriend Shorts- Another favorite from WIW, if I’m not wearing a dress, I’m wearing these shorts!  I have the darker wash, but love the lighter ones too.

Boss Lady Mug- My new coffee mug that I’ve been using every morning was a sweet gift from my colleague, Michele!  I have a growing collection of fun coffee mugs since they’re way more fun to drink out of than my basic everyday china mugs (that I never use)!  Thanks Michele!

And our weekly meal plan!  Since school starts this week, and we have softball and/or baseball practice 3 out of the 5 weeknights, our meal plan will be key for getting dinner on the table.  Here’s what we’ll be eating this week:

Sunday- Mushroom Toast with Roasted Okra and Cauliflower (shown above– we ate this last night, and the mushroom toast was amazing!!)
Monday- Slow Cooker Vegetable and Barley Soup with French Bread
Tuesday- Trader Joe’s Black Bean Burgers with French Fries
Wednesday- Udon Noodle and Vegetable Stir Fry with Broccoli
Thursday- Black Eyed Pea Curry with Rice and Kale
Friday- Mushroom, Zucchini, and Asparagus Fajitas with Mexican Coleslaw
