I’m not sure I could be more excited that today is FRIDAY! Maybe if it were next Friday (right before our Spring Break starts), but this is pretty good too. Bennett has a baseball game tonight and we have the girls’ soccer games Saturday morning, and then it’s wide open. Sadly the house is a wreck and I have PILES of laundry today, but still–WEEKEND!
With the weather finally warming up a bit, I have been craving lighter meals for dinners. I love salads with a million toppings, and so as I start thinking about our meal plan next week, I thought I’d share some of our favorite salads- as entrees and/or on the side- and then I’ll be sharing a NEW favorite salad here next week! With Ranch and BBQ Sauce as dressings, how can you go wrong?
This salad is simple, but so delicious (and don’t let the dressing scare you- it’s amazing!). It would be great with grilled steaks or chicken.
This is my go-to for a Mexican side dish instead of rice and beans. It makes a TON, so it’s great for a crowd, or for leftovers the next day!
A lightened-up pasta salad that’s perfect at a barbeque or just at home with burgers.
