I love a good frivolous celebration, and so Pi Day last week was the perfect excuse to have a sweet treat after dinner to celebrate a made-up holiday! I wanted to make something very simple with very few ingredients, and this ice cream pie was perfect!
As Ben and I walked into Kroger, I got the idea for the ice cream pie. A pre-made pie crust filled with ice cream and a yummy topping would make for a super easy, customized pie! The best part about it is that you can make any combination of flavors that you want. Ben picked out chocolate peanut butter ice cream (we bought Halo Ice Cream that is lower in sugar and fat, and higher in protein than regular ice creams, and is DELISH), so we used a chocolate graham cracker crust, and topped it with chocolate fudge. But there are SO many different ice cream and topping flavors that you could make a million different pies. And they are so easy and good that you would WANT to! The kids LOVED it, and insisted that I make another one this week. And I didn’t feel so bad about having a slice since the Halo ice cream isn’t even so bad for you! But if you toss in a few pints of Ben and Jerry’s or Haagen Daaz, I won’t tell. 😉
So here’s how we made our Chocolate Peanut Butter Ice Cream Pie…
2 pints of Chocolate Peanut Butter Ice Cream
Chocolate Graham Cracker Crust
1/2 jar Chocolate Fudge
First, I set the ice cream out for a few minutes so it was nice and soft. Not totally melted, but soft and malleable. Empty both pints into the pie crust, and smooth so the ice cream is nice and smooth and even all over. Top the ice cream with chocolate fudge until the top of the pie is covered. Swirl with a toothpick and even out the fudge topping. Put pie in the freezer for about 2 hours to harden. Run a knife under hot water to cut the pie easily and EAT!
