Weekend Recap + Weekly Meal Plan

Hello Friends!  I hope you had a wonderful weekend!  We wrapped up our Winter Break with a (QUICK!) trip to Blue Ridge, and then the girls got sick.  Womp wahhhh.  But I think everyone is on the mend and back to school today (well, Ben tomorrow).  Here’s a bit from our weekend:

The kids had a big time in the mountains!  They love climbing on PaDaddy’s tractor and taking Gator rides.  So that’s what we did!

We got home on Friday and I was too tired to cook- so we had a veggie tray and cheese tray for dinner.  Best idea ever!!  I am sticking with the no-cook or really simple Friday dinners from now on!


Friday night, Ben had baseball practice.  It is the CUTEST THING EVER!  A bunch of little four-year-old boys out there with a bunch of Daddy helpers learning to play baseball is just darling.  If you can get over the anxiety when they all start swinging their bats around each other.  YIIIIIIKES!  Thankfully they require helmets anytime they are batting or holding their bats at all!


On Saturday, we did a little family baseball practice in the front yard, and then headed to Chick Fil A for ice cream!  Gracie tore it up. 🙂

Saturday night, Scott and I got a date night out!  We went to Masterpiece, a Chinese restaurant in Norcross with some friends, and our dinner was amazing!!  It was authentic Chinese, not fast-food style, and it was incredible.  We stuffed ourselves and have got to go back soon to try some more dishes!

This is what we came home to. 🙂  Sadly, Gracie was struggling when we got home- she had a bad cough that was keeping her up, bless her little heart.  We got her set up in our bed (a benefit our kids LOVE when they’re sick) with cough drops, cough medicine, water, my oil diffuser, and a cooking show (her choice).  We skipped church on Sunday so she could rest, but she was feeling much better by last night, so she’s in school today.

Since we didn’t go to church, we made necklaces and painted fingernails!

And me and my favorite little boy got some snuggles in too. 🙂

I have been in a bit of a rut lately, having a hard time looking for new dinner recipes.  I like family favorites, and repeating old reliables, but Iove trying new ideas best!  This week I have a mix of a few old and a few new.  Here’s what we’ll be eating this week:

Monday- White Chicken Enchiladas and Spanish Rice

Tuesday- Blackened Tilapia and Garlic Roasted Mushrooms & Green Beans

Wednesday- Grilled Steak and Three Bean Quinoa Salad

Thursday- Roasted Spatchcock Chicken with Roasted Brussels Sprouts and Sweet Potatoes

Friday- Monte Cristo Flatbread Sandwiches with French Fries and Fruit Salad
