Hello Friends! I hope you had a wonderful weekend, and if you live in Atlanta, that you survived Snowpocalypse 2017:
All in good fun… 🙂 We were predicted to get snow, and we got a good sleet, and that was about it. I even went to the store like the crazy Georgia fools that we are and stocked up on the neccessities. You know, like wine, haha! But, I will say, that when we had that freak snow/ice storm two years ago, we really were stuck inside, and ain’t nobody got time for that, so it was better to be prepared and disappointed than not prepared and snowed in for a week!
Anyway, I thought I’d change up my Monday posts a bit, and combine my old Hello Monday posts with my Meal Plan Monday posts, and do a little bit of both. So here’s what we’re saying hello to today!
Hello National Championship!
Our beloved Clemson Tigers and my Dad’s beloved Alabama Crimson Tide are playing in the National Championship Game tonight!! Now, I don’t ever want to see my Dad disappointed, but I gotta pull for the Tigers! We’ll see how it turns out. Scott will be pacing the house and counting down the minutes all day long…
Hello Back to School!
Today is the kids first day back to school from Christmas break. It has really been a GREAT break, and I really am so sad to send them back! They have played so well together, and after we traveled a bit before Christmas, we have really taken it easy, stayed home, relaxed, and enjoyed ourselves together for the last two weeks. Doesn’t Christmas seem like it was months ago already?? I am glad to get back into our routine, and our normal schedule, but Christmas break is probably my favorite time of the year. I’m sad for it to end. 🙁
Hello Trader Joe’s!
We have been going to Athens more often lately, and hitting up Trader Joe’s on the weekends. The kids love it because they have a big table with coloring pages and crayons, free lollipops, kid-sized grocery carts, and they give TONS of stickers. I could spend hours and millions of dollars there, and always find the greatest foodie treasures!
Hello Bike Riding!
Ben and Brantley got new bikes from Santa (Gracie got one on her birthday last May), and so we’ve been outside a lot (not this past freezing cold weekend) riding bikes in the neighborhood. They have so much fun and are doing a great job!
The kids got an Osmo Gaming System for Christmas, and have loved playing with it too. It attaches to an Ipad and allows the kids to play several different learning games for reading, math skills, creativity, and even coding! All three can play together or separately, and have really been enjoying it.
Hello Healthy Meals
We did our fair share of overindulging this holiday season, so we’re back to light, healthy recipes for the start of the new year! Above is what we had on Saturday night (the spoils of our Trader Joe’s trip)- Sauteed Tilapia in a soy broth with bok choy, and stir-fried broccoli, asparagus, mushrooms, onions, bell peppers, and zucchini. It was delicious and very filling! And a perfect segue into what we’ll be having for dinners this week!
Sunday- Homemade Chicken Noodle Soup
Monday- Pickle-Brined Baked Chicken Fingers, French Fries, and Side Salad
Tuesday- Kale Salad with Grilled Chicken, Butternut Squash, Beets, Quinoa, Walnuts, Cheddar, and Cranberries with Apple Cider Vinaigrette (recipe to come for the vinaigrette!)
Wednesday- Steamed Spaghetti Squash (pasta noodles for the kids) with Meat Sauce and a Side Salad
Friday- Broccoli Cheese Potato Soup
