Meal Plan Monday

Hello Friends!  I hope you had a wonderful weekend!  It got COLLLLLLLDDDDDDD the end of last week, so we had a fire going all weekend long, which is pretty much perfection to me when combined with twinkly Christmas lights and a bottle of wine.  And except for a few last-minute things and stocking stuffers, I am done with Christmas shopping!  And that is great, because we have two SUPER BUSY weeks leading up to Christmas!  Which is also why my meal plan is a little short this week.  We have a party Wednesday night, and then we are leaving for South Carolina on Friday for Christmas with the Luton side of the family.  So here’s what we’ll be eating this week:

Fiesta Chicken Casserole and Mexican Coleslaw

A friend of mine shared this recipe with me (Thanks, Angie!), and it is right up our alley.  Super simple, Tex-Mex flavors, and a comforting casserole.  I’m gonna make this quick 5-minute coleslaw on the side too, since I love a good side dish. 🙂  And a good coleslaw!

Pizza and Salad

Gotta have a reeeeeeally easy night at least once this week. 🙂  I bought a cheese pizza for the kids, and a thin crust pepperoni pizza for Scott and I.  Also an Aldi Caesar salad because we are obsessed with them!

Broccoli, Cheese, and Potato Soup with French Bread

I am so excited to try this soup!  I love Broccoli Cheese Soup, and love Potato Soup, but the combination of the two sounds even better!  And I love a lot of recipes from SkinnyTaste, which are light but not lacking any flavor at all.  SO I am really hoping that it won’t be too heavy but still nice and comforting.  And just a little bit of bread on the side for dipping. 🙂

Roasted Pork Tenderloin, Potatoes, and Honey Butter Carrots

Since the pork, potatoes, and carrots are all roasted, I am going to try to do kind of a one-pan roasted dinner.  The pork needs to cook the longest, then I’ll add the potatoes, and then I’ll add the carrots, since they don’t cook as long.  I think roasted dinners are so easy and SOO tasty.  All you have to do is season everything well, chop it up, and throw it on the pan, and dinner is done in no time.

I have also been planning and prepping my lunches each week, and love having lunch ready each day when I am starving and open up the fridge!  Here are the two dishes I’m making for lunches this week:

Southwest Quinoa and Grilled Corn Salad

I love quinoa salads, and this appeals to my love of southwestern flavors, plus it looks like it will make a lot which can be divided up well for lunch servings.

Butternut Squash Pizza

I am so anxious to try this out!  Nobody else in the family is a big butternut squash fan, but I love it.  I think I am going to roast all the squash and the onions ahead of time, and then whichever days I want pizza, I’ll assemble it and bake it at lunch time.  I am always up for a spin on typical pizzas, and hopefully this won’t disappoint!
