Hi Friends! Hope you had a wonderful weekend! Ours was a mixed bag- we had a great Friday afternoon with friends at our local pumpkin patch, but then Saturday morning Brantley and I were both struggling with sore throats and allergies! But we stayed inside most of the day and rested, and started feeling a little better yesterday.
Anyway, on this Meal Plan Monday, here’s what we are planning on eating this week:
We had the Pioneer Woman’s Salad Tacos a few weeks ago, and I LOVED them! I liked them even better than regular tacos (which is a lot). It’s pretty simple, you just add a ton of lettuce into the taco shells, then you add the beef, tomatoes, and a simple salsa and sour cream sauce. They’re simple, they’re light, and so, so good!! WE have a bunch of leftover black beans that I need to use up, so I’m making Spicy Black Bean soup that I have made a few times that is also sooo good!
Gotta have a pizza night, you know. 🙂
Crack Chicken Tenders, Corn, and Broccoli
We have some frozen chicken fingers, so I am totally taking the shortcut route with this recipe, and am going to make this Crack Chicken! I think the kids are going to love it with the sweet BBQ sauce and ranch dip.
Roasted Asparagus and Mushroom Carbonara with Salad
I love regular spaghetti carbonara, and this version with asparagus and mushrooms is just that much better! Last time I made it, it ended up a little greasy, so I’m going to ease up on the olive oil this time and hope for the best.
Y’all. This is seriously one of my favorite recipes. It is SO EASY (you throw a few things in a crockpot, cook it for 8 hours, cook rice, chop some veggies, and done), and the flavors are KILLER. You can sub in white or brown rice, or quinoa, or maybe even noodles! If you try anything from this meal plan this week- TRY THIS!! A few friends of mine have tried it, and they have been converted. It’s a delicious, easy, and healthy meal. Seriously can’t wait for this dinner again!
