Hello Friends! We are back from the beach! We left super early Saturday morning (we had to pick up our dogs by 12:30), so we got home by lunchtime on Saturday which was nice, and has given us a little bit of time to rest and prep for our super busy week ahead! Isn’t it funny that you seem to need a vacation once you get home from vacation?!
So, today I’m back to Meal Plan Monday! Since the summer began, I have not been interested in cooking dinner whatsoever. I’m not sure if it’s the heat, or the laid-back summer schedules and lazy days or what, but I have hardly been to the store for a regular grocery trip, much less full-on dinner prep and meal planning! But when we got home on Saturday, and we had pretty much NOTHING in the fridge and the pantry, I figured that I needed to get back on the ball since our calendar is about to get full again! So I am only planning very simple dinners, and plenty of room for leftovers, or no-cook options to keep it easy! So here’s what we’re eating this week:
One-Pan Ranch Pork Chops and Potatoes with Steamed Broccoli
We actually made this last night and it was super easy and very tasty! You mix up a spice blend and coat the pork and the potatoes, roast them for about 40 minutes, and done! I have an electric steamer that I cook the broccoli in, and dinner is prepped and done in under an hour. I’d recommend this and we’ll likely have it again.
Scott and I have an event on Thursday night, so the kids will be having their favorite…pizza! Can’t get easier than a frozen pizza, and they love it. Good enough for me!
I was watching Sara Moultin’s cooking show on PBS the other day (yes, I am old), and she made these mushroom enchiladas with portobellos, and they sounded so delicious. Plus some grilled zucchini covered in mayo, lime, chili powder, and feta? Sign me up! I am obsessed with Mexican street corn flavors, and love the idea of subbing in zucchini for the corn. Anxious to try this dinner!
Meatballs with Marinara and Fusilli and Caesar Salad
Frozen meatballs, pasta sauce and corkscrew pasta will take maaaaaaaaaybe 20 minutes? Toss together a bagged Caesar salad (have you tried Aldi’s bagged Caesar?? It’s awesome!), and dinner will be done. EASY.
Chicken Burrito Bowls
You could totally use a rotisserie chicken, but I’m going to throw 3 chicken breasts in the slow cooker with a block of cream cheese and a jar of salsa to make Mexican crock pot chicken to add to the burrito bowl! Add some Spanish rice, black beans, lettuce, tomatoes, cheese, onion, salsa, avocado, jalapenos, and all my fave taco toppings. One of my family’s favorite dinners, because everyone gets to pick and choose exactly what they want in their bowl. Plus it’s just really good!
So that’s what we’re going to be having this week.
