Hi Friends! I hope you had a wonderful weekend and were able to enjoy some lovely spring weather like we were!
If this is your first time here or you don’t follow along regularly, today is Meal Plan Monday! We are a busy family, and if there is any chance of getting a decent dinner on the table every night, it means I have to have a plan! So every Sunday, I have a meal plan and grocery list ready, and I head to the store for the week. It works really well for my family, and we’re not opening the fridge at 5 o’clock each night, trying to pull together a meal. I plan for 5-6 meals, so that I have enough dinners to cover weeknights, and allow for a night out or a night of leftovers, and then we usually make a run to the store for special un-planned meals on Saturday nights (we’ve been doing a lot of steaks lately, but did pho last week, shown above!). So my Meal Plan Monday posts are the meals and recipes that I have planned for the upcoming week. Some are quick and easy, some are tried and true family favorites, and some are new finds from friends or the internet (Pinterest is my BFF), and I share them all here!
So with all that being said, here’s what we’re having this week!
I saw this recipe on Facebook, as one of those Buzzfeed videos, which I love. I thought it looked pretty good, quick and easy, and I like zucchini noodles anyway, so I was sold. But Y’ALL. I made this for dinner last night (and Ben helped me!), and it was delicious! The sauce is not light (but man, is it good), but the zucchini noodles are definitely a healthier option to pasta. The kids even asked for seconds, and everyone ate their zucchini noodles! I will be making this again for sure, and will make more noodles next time!
Ham, Green Beans, and Macaroni and Cheese
Not fancy, but this is my kids favorite dinner! So easy- it’s ready in about 15 minutes- and when ham slices are on sale, this meal will run you about $6 (yesterday at Aldi I bought my Smithfield ham slice on sale for $3.58, their mac and cheese is 33 cents (we already had butter and milk), and 2 cans of green beans and a can of chicken broth is $1.50)!! It’s hard to beat that, especially for a meal the whole family loves!
I love making rice bowls, burrito bowls, quinoa bowls, you name it. And I thought this one sounded so good with Thai flavors and salmon instead of traditional chicken or pork. I’ll probably sub in chicken for the salmon in Scott’s bowl, but stick with the fish for mine and the kids. Hope it tastes as good as it looks!
Green Beans, Corn on the Cob, Sauteed Squash, Tomatoes and Onion Salad, and Cornbread
I’ve been making at least one and usually more vegetarian meals each week. It’s great because it incorporates more veggies into our diets, but it also saves a bit of money! This week I thought a vegetable plate with a side of cornbread just sounded so good. I might throw in a little bit of fried okra too, and this meal will be as satisfying as any traditional meat and three.
Everything that I have made from Smitten Kitchen has been great, and I expecting no different from these Everyday Meatballs. I’m thinking the meatballs and bread will be pretty heavy, so we’re just going to have a big, leafy, green Caesar on the side. Preeeeeeety excited about this one.
I also grabbed a pre-made fresh pizza from Aldi for Friday night since Scott will be feeding the kids without me, and I thought I’d try to make it easy on him!
