Hi Friends! I hope you had a nice weekend! We have a busy week coming up (what’s new) so let’s take a look at what we’re going to be eating this week!
We were supposed to eat this last week, but on Thursday night, I was NOT feeling cooking at all. I picked up a couple of pizzas for Scott and the kids, and I got a pulled pork burrito bowl for dinner (YUM), and decided to save this lentil soup for this week!
Brantley starts soccer on Tuesday, with practice at 6pm, so Tuesday night dinners, for at least the next couple of months, are going to need to be super quick and easy. Aldi has these enormous fresh take and bake cheese pizzas for $4.99, so the kids are happy with their cheese-only slices, and I just add some pepperoni, mushrooms, and peppers to mine and Scott’s.
Greek Turkey Burgers and French Fries
I like turkey burgers, but think that sometimes they can be kind of bland and can easily dry out. But I like that these have lots of yummy additions, including tomatoes, spinach, dill, and garlic, and yogurt to keep them moist. I’m anxious to try these with some herbed mayonnaise, red onion, and cucumber. Yum!
Crock Pot Corned Beef and Cabbage Soup with Irish Soda Bread
I have never made corned beef and cabbage for St. Patrick’s Day, but thought I’d give it a go with this crock pot soup. It seems very simple and the reviews are good, so we’ll see how it goes!
Grilled Shrimp Tacos with Pineapple Jalapeno Slaw and Avocados and Corn on the Cob
This is one of my favorite warm weather recipes, and since spring is in full swing around here, we’re having some tacos this week! Instead of fish, we’re doing shrimp, and pineapple in the slaw instead of mango. Add some corn on the cob, and dinner will be served!
