Meal Plan Monday

Happy Monday, friends!  Hope you are having a good start to your week like we are, after a beautiful day yesterday!  After church we had a little picnic lunch outside (Homemade Lemonade!  Chocolate Chip Cookies!), and were able to enjoy the sunshine and spring weather for the afternoon (hope it’s here to stay!).  Anyway, here’s what’s on the menu for our dinners this week!

Hibachi Shrimp Supper with Lo Mein and Zucchini and Mushrooms

I am so excited to make this Hibachi Shrimp Supper tonight!  I LOVE Japanese Hibachi restaurants, and I always order shrimp when we go.  I am so, so hoping that this recipe will come close to a takeout version, and know the kids will love it!

Mississippi Pot Roast, Honey Butter Roasted Carrots, and Mashed Potatoes

I have seen tons of rave reviews about this pot roast, and decided to give it a try this week.  Scott loves roasts with rice or mashed potatoes, so this ought to fit the bill.  Pairing it with one of our new faves, honey butter roasted carrots, and mashed potatoes, an all-time favorite, I am hoping for a hit!

Ham Steak, Macaroni and Cheese, and Green Beans

Wednesday night has become our easy dinner night, and so we’re sticking with an old standby that cooks up in literally 15 minutes.  While the pasta water is coming to a boil, I start the green beans.  On my quick nights, I make them from a can instead of making then fresh, but I drain all the liquid out, and cook 2 cans of green beans in 2 cups of chicken broth.  They come out SO much better, and loose that metallic taste that you can get sometimes from canned green beans!

Buttermilk Roasted Chicken with a Caesar Salad

The kids love eating chicken drumsticks, since they can pick them up and eat them right off the bone.  Drumsticks also happen to be my favorite way of eating chicken, since they are so tasty!  I am excited to try this buttermilk roasted chicken, though I’m going to have to remember to start the marinade on Wednesday to eat on Thursday!

Crock Pot Lentil Soup

I made a lentil soup a few weeks back that was (kind of surprisingly?) gobbled up, leftovers and all.  So I thought I’d try it again, with a slightly different recipe.  Can’t beat crock pot soup!
