Meal Plan ummm Tuesday

Hi Friends!  Got a bit of a late start to the week (can we just start over?), and am just now getting to my weekly meal plan post.  So here’s what we’re having for dinner this week:

Asian Beef with Snow Peas and Broccoli, and Cauliflower Rice

The Pioneer Woman never disappoints!  I got her newest cookbook for Christmas, and this is the first recipe I have tried out of it (I made it for dinner last night), and it was really good.  I added some broccoli to ours to make it go a little bit further.  The sauce is delicious, and this was definitely one of the best stir fry recipes I have made.  Since we are still trying to avoid white rice, pasta, etc., I omitted the rice (which was painful), and tried cauliflower rice, as recommended by a friend of mine.  Is it as good as rice??  NOPE.  But is it better than nothing?  Definitely.  I don’t think I’ll be making it just for fun to eat, but it’s a good substitute for rice with a stir fry!

Balsamic Chicken with Asparagus, Mushrooms, and Tomatoes

I made this last week, and it was so good I decided that we’d have it again this week!  It take less than 30 minutes to make, was super easy, and WOW is it good.  The perfect weeknight meal.

Spinach, Feta, Mushroom, and Bacon Crustless Quiche with Roasted Potatoes

As I was trying to finish my meal plan this week, I was looking through the fridge to see what we we already had that I could build a meal off of.  We had a bunch of spinach, eggs, and a pack of bacon, so when I started looking through my recipe boards, I saw this one for a quiche, and thought it would be perfect!  The recipe doesn’t call for bacon, but I think it will add a lot of flavor and crunch.  I’m going to roast some potatoes, and we’ll have a great meal.  Thankfully the kids love eggs, so I’m hoping they’ll be fans too!

Pork Tenderloin, Roasted Brussels Sprouts, and Honey Butter Carrots

Another repeat from last week!  This was another huge hit and we had extra carrots and extra brussels sprouts, so I figured we’d just have the whole thing again.  If you don’t think you like Brussels Sprouts, just try this recipe.  We have been eating these almost every week, they are SO GOOD.  And the carrots are just as good.  Scott told me a long time ago that he didn’t like cooked carrots, so we never really ate them.  But these are amazing.  He even got seconds!  And the kids ate everything.  The pork is good, but the vegetables are the stars of this meal!

Chicken Fajita Salad

I love salads for dinner, and I thought having warm chicken, peppers, and veggies on top of cold lettuce would be so good.  I am anxious to try this one this week.
