Happy Monday! Hope y’all had a wonderful weekend. We played in the park on Saturday, then after a day full of church on Sunday, we cooked up a Super Bowl Party Smorgasbord for dinner! So we cheated sufficiently, and are now back to our healthy weekly menu (no cheese dip allowed :)). Here’s what we’re eating this week!
I thought this chicken baked with dijon mustard, maple syrup (I’ll probably use honey), red wine vinegar, and rosemary looked good and really easy. Perfect for a weeknight with some broccoli and some yummy mushrooms on the side!
Lentil Soup with Ciabatta Bread
I am perhaps most excited to try this recipe this week! I have some friends who have raved about how delicious this soup is, so I’m excited to try it. I have to admit, I have only had lentils one time before, and I was not such a fan, but I am willing to give them another chance. I’ll let you know how it turns out!
Chicken Sausage, Honey Butter Carrots, and Sauteed Zucchini
Another super easy dinner for this week. I will probably saute the chicken and zucchini together while the carrots roast in the oven. The carrots, by the way, have become a hit with the family! This will be the third week in a row I’ve made these carrots, and they have become a new favorite.
I love burrito bowls, but wanted something different than chicken. I thought pork carnitas would be really good, and making them in the crock pot would be low maintenance. We will eat them with lettuce, a *liiiiiiiiiitle* bit of rice, cilantro, limes, maybe a *liiiiiiiiiittle* cheese, avocado, pico de gallo, and some cuban black beans. Can’t. Wait.
One-pot meals are THE BEST, and ones that go in the oven are even better. We don’t usually go for Greek flavors, but anything with roasted potatoes sounds good to me!
