Happy Monday! We did a lot of relaxing at home this weekend, and I’m back today with our meal plan for the week!
We actually ate this last night, and it was really good. I ended up kind of making my own mushroom gravy to eat over the pork chops, and I sauteed a bunch of squash and zucchini with an onion to eat with the pork chops. Easy and good for a Sunday night!
Flatbread Pizzas and Salad
Scott will be gone a few nights this week again, so a few easy nights are a must. I like to buy packages of flatbreads for making easy pizzas that the kids LOVE. I just top the flatbreads with tomato sauce and mozzarella (they make it easy on me since they don’t really like any toppings!), and bake them for a few minutes, open a bag of pre-packaged salad (more for me than the kids :)), and dinner is served. And everyone is happy!
Ginger Garlic Baked Salmon with Rice and Steamed Broccoli
We don’t eat fish nearly as often as I’d like, but Scott lets me squeeze it in every once in a while. I can’t wait to try this Ginger Garlic Baked Salmon. It sounds so good and cooks pretty quickly!
Ham, Mac and Cheese, and Green Beans
This has become a weekly staple. Though I am not a fan of repeats (especially weekly repeats), but I can’t argue when the kids love it and eat it all up every week and ask me when we can have it again! Super easy dinner, done in 15 minutes, and popular with the family makes for a winner.
I have been wanting to make this meal for a while, but thought it felt too heavy for the summer. But now that it’s getting cooler, roasted potatoes and sausage sounds so good with some crusty bread and a fresh salad!
Unsloppy Joes and Sweet Potato Fries
I love Sloppy Joes, but with three kids, they are just that. SLOPPY. I love the idea of making sloppy joe beef, and adding a bit of cheese and tucking it all into biscuit dough and baking it for a nice little pocket sandwich! We’re going to eat them with sweet potato fries for a (hopefully) fun and yummy dinner.
