Meal Plan Monday

Hi friends!  Hope you had a great weekend.  I got on the ball, and planned out our menu for the week, and am sharing it today!

Chicken Cordon Bleu Casserole and Steamed Broccoli

I bought a whole chicken for a reallllllllly great price, and plan on boiling it and using the chicken for this casserole recipe!  Add some steamed broccoli on the side, and dinner will be ready.

Potato Soup and Dinner Rolls

The Pioneer Woman pretty much never lets me down.  Every recipe of hers that I have tried has been delicious, and I’m sure this soup will be no exception!  I am totally feeling the fall vibes lately, and this soup screams cool weather and jeans and football season to me.  Plus, it’s an expensive dinner that will be easy to whip up on a weeknight.

Ham, Green Beans, and Macaroni & Cheese

This meal is becoming a weekly staple since it’s under $10 for the whole family, it’s very quick to prepare (like, 15-20 minutes!), and everyone eats it all!  I usually buy Smithfield Ham Slices, and they fry up quickly on the stove and are just so, so good!

BBQ Chicken Salad

I plan on using half of the whole boiled chicken in this salad!  So, early in the week, I’ll have the chicken already cooked, and this salad should come together very quickly.  Perfect for one of Brantley’s cheerleading nights. 🙂

Crock Pot Enchilada Chicken and Cheesy Baked Black Beans and Rice with Cilantro and Tomatoes

I am anxious to try this crock pot recipe for enchilada chicken, because I think it has so much potential!  The chicken can be shredded, and then used in tacos, actual enchiladas, quesadillas, or just eaten on it’s own, like we plan to do this week!  And I’m going to add some cilantro, tomatoes, and onions to the top of the rice and beans to add some vegetables to the meal, ha!
