If you follow along with my Meal Plan Monday posts, you’ll know that I get a lot of our weeknight dinner recipes from Pinterest. There are soooooo many great recipe ideas, and no matter our tastes, plans, or budget for the week, I can always find plenty of options.
But, just like other recipe resources, there are going to be hits, and there are going to be misses. I wanted to share some of the recipes that I have tried lately, and give a little review on how we liked them, and if they’re worth making again!
One word: delicious. If you like salmon, you will like this. I had never roasted broccoli before, and I loved it. I like to roast asparagus, and it ended up with a similar flavor. The salmon stays very moist and the breadcrumb and parmesan topping is crunchy and savory. Great thing about this recipe? It can be prepped and cooked in less than 30 minutes. Super healthy, fast, and so good! Two thumbs up on this one.
This Chipotle Chicken Taco Salad is a GREAT summer lunch or dinner salad recipe! It makes a TOOOOON, so it’s great for a potluck or neighborhood picnic, or just for family dinner, like for us. I only poured about half the dressing over the salad, and then let everyone add more dressing if they wanted it (I like very little dressing, while Scott likes his salad swimming in it), but otherwise I stuck right to the recipe and it was really good. Also another good healthy recipe! This salad only has 250 calories for 2.5 cups!
I made this with Barbequed Ribs while we were at the beach. It was easy, really tasty, and definitely a great summer side dish. And bonus points again, healthy! It’s a weight watchers recipe, and only 3 points for a cup of salad. One thing I would recommend…make it in advance! The longer it chills in the fridge, the more time it has for the flavors to blend and become more prominent. I would at least make it a few hours ahead of time, and even a day ahead of time, just leave the lettuce out and add it just before serving so the lettuce doesn’t wilt and get soggy.
A bigtime “meh.” I should’ve known, with Velveeta (which existence is only validated by Velveeta and Rotel cheese dip) and canned chicken as ingredients, that this wasn’t going to be great. Even my mac and cheese obsessed kids were not fooled with this one. It calls for whole wheat noodles (which I wold just rather not eat pasta than have to eat whole wheat pasta), and maybe if a better cheese sauce was made instead of the Velveeta and cream of chicken/mushroom soups, it could’ve been better, but this was a miss for us.
This. Was. Delicious. I love black bean soup (even better if it’s fall!), and this, even being a weight watchers recipe, did not disappoint one bit. Just spicy enough, without being overwhelming, and perfect with a dollop of sour cream and a sprinkle of cheese on top. Perfect lunch or dinner with tortilla chips or a corn muffin on the side, or even with a Grilled Cheese Sandwich!
Another meh. If you’re craving the creamy deliciousness of a beautiful and time-intensive risotto, you are better served to just make a traditional recipe, instead of using this weight watchers recipe. It was gloppy instead of smooth and creamy, and lacked flavor. If I were you, I’d pass on this one.
This was a BIG hit! This taco pasta is a filling, comforting meal, and also kid friendly. It is simple, and add on a side salad or some green beans for a complete meal. This would be a good repeat for sure.
This was not just a hit, it was a HOMERUN! If you like salmon, or even if you only feel luke-warm about it, you need to at least try this recipe! Scott is not a big fan of fish (at all), but the blackening seasoning on the salmon, and the sweet and lightly spicy salsa is just too good not to like. I grilled the salmon on a grill pan on my stove, and it stayed nice and moist. With a side of rice and broccoli, this is one not to skip over.
And the last one I’m going to review today is this Blue Cheese Chicken Burger, which was delicious!!! It is made with ground chicken (which you would think is expensive, but it’s actually cheaper than ground beef!), and stays very moist and flavorful with the addition of the other yummy burger toppings. Great for the summertime, as a typical burger alternative. Would also be great with the BLT pasta salad from above!
