Meal Plan Monday

Hello friends!  I hope y’all had a great weekend!  We took it pretty easy and hung out since the five of us were all back together.  Today I’m here to share my meal plan for the week, since I am starting to get back into the more structured routine for school (which is starting back in about 2 and a half weeks, EEEEEEK!!).

Mexican Chicken and Bean Tostadas with Black Bean Soup 

I had to pop in the store yesterday for a few things, and noticed that the ground chicken was on sale (only $2.99 a pound!).  Since I had not made my meal plan yet, I decided to add on a meal with ground chicken so I could take advantage of the good deal!  I made these chicken and bean tostadas a few months ago, and they were really good, so I thought we’d have them again.  And I thought a cup of the spicy black bean soup would be nice on the side.  I have been craving Mexican lately, and these will fit the bill!

Barbequed Chicken Sliders with Coleslaw and Sweet Potato Fries

This will definitely be my easy meal for the week.  We made Barbequed Chicken on Sunday night and had plenty left over, so I’m planning on shredding it up, adding a it more sauce to it, and piling it up on some cute little mini buns, and have some BBQ chicken sliders!  A quick and easy coleslaw will be perfect to top them with, and a few if my favorite Wickles Pickles (if you haven’t tried Wickles, and you like sweet and SPICY pickles, you MUST try them!  They are completely addicting).  Some sweet potato fries on the side, and I think everyone will be happy.

Tuscan Pasta with Tomato Basil Cream and Caesar Salad

I like making vegetarian meals once a week or so, but figuring out something that’s going to make everyone happy can be tough.  The answer is usually some kind of pasta, and I thought this one sounded pretty good.  Ravioli is filling and pretty kid-friendly, and add a side Caesar salad for a complete meal.  Cheap and hopefully good!

Korean Beef Bowl with Brown Rice and Broccoli

Simple meal with Asian flavors, rice, and broccoli, which should be tasty and come together quickly.

Mustard Balsamic Pork Chops, Roasted Asparagus, and Mashed Potatoes

Don’t these pork chops look delicious?!  We like to grill a few nights a week when Scott is in town, and are always looking for new marinades and/or new flavors for chicken and pork.  These sounded really good, and will be perfect with some asparagus and potatoes on the side.
