Hello and Meal Plan Monday

Whew!  Hi there!  I could say that I have been busy (and I have), or that I wanted to take a break since I was on vacation (I was, and I did), but really, I haven’t been blogging much in the past three weeks because I think I just needed to take a break in general.  We have been go-go-going, and I just needed to take one of those balls that I constantly have up in the air, and set it on the ground for a sec, so I could focus on the others a bit better.  Can you relate?  So forgive me for being MIA, and forgive me if I do it again!  But I’m back for today, and would like to share what I’m saying hello to on this fine Monday morning, and share a few recipes I’ll be making for the fam this week.

 Hello Back From Vacation Readjustment

Man, is it hard to be at the beach for a nice, long week, and then come back to the normal routine!  And Lord, the laundry!!  The house we stayed at had a washer and dryer, and I got a few loads some before we left, but still, my goodness, the clothes this family goes through blows my mind.  Also the kids played all day long on the beach, and Ben didn’t nap one single day.  He doesn’t really nap every day on a consistent basis anymore, but he does take one every few days or so.  We need to get back into that routine.  And I am usually a stickler for bedtimes, but let them slip a bit (a lot?) for the girls.  I definitely need to get them back in their bedtime routine!  And for me, I need to curb this noon-time beer craving I have, since we were pretty liberal with drinking on the beach after lunchtime! Not quite as acceptable when you’re not on vacation… Ha!

Hello True Detective

I started the first season of the HBO series True Detective last night, and am excited to watch it!  The second season actually debuted last night, and I have started recording it too, but I thought I’d go ahead and binge watch the first season quickly, and then catch up with season two.  I have heard such awesome things about the show, and can’t wait to get into it!

Hello VBS, Round Two!

Brantley and Grayson start their second Vacation Bible School of the summer, and this time it’s at our church, and it’s every morning this week from 9:30-12:30!  They are SO excited since they loved the last one so much, and it’ll be  familiar since some of their regular friends from Sunday School will be there.  Ben will be able to go next year, but I am actually looking forward to some one-on-one time with my little man.  We’re going to be errand running machines while the girls have a big time!

Hello Bible Study Group 

As much as I loved being at the beach with my incredible family this past week (more on that later this week, I hope!), I really missed my friends in our weekly Bible study group!!  We are reading The Best Yes,  by Lysa TerKeurst, and it is fantastic.  If you are an overwhelmed mom (or not!) with a lot (too much?) on your plate and need some direction, this is such an amazing book.  And popular, too!  I posted a pic on Instagram that I was reading this, and a bunch of friends posted that they were reading or had read it, and how amazing it is/was.  I concur, ladies.  Definitely worth reading.  And I can’t WAIT to get back together with my girls and discuss and share with each other.  My heart really needed their fellowship and friendship.

Hello New Weight Watchers Recipes!

Since I’m back from vacation, I am also back to my trusty Weight Watchers program.  I don’t think I did tooooooo bad at the beach, but I need to get back on track for sure, before r second beach trip next week!  So, here I am sharing three (WW) meals we’ll be having this week.  Scott will be out of town for three nights, so I will probably be taking the kids out for Chick Fil A one night for a little break!  Plus, I can’t even remember the last time I’ve had fast food, and I would love a chicken sandwich!

Chipotle Chicken Taco Salad with Tortilla Chips

I thought this salad sounded really good, especially when 2.5 cups is less than 250 calories!  Anxious to try this one.

Loaded Potato and Cajun Chicken Skillet with Cumin Zucchini

Sometimes it’s hard to find a good and hearty WW meal that I know Scott (and the kids, for that matter) will enjoy too.  But loaded potato?  Cajun chicken?  Something tells me that this will be a hit.  Also the fact that there’s cheese and bacon on top certainly doesn’t hurt. 🙂

Homemade Pizzas

We made these a few weeks ago, and the kids loved it.  I bought a pack of four pizza flatbreads and put the sauce on them and and on a plate for each child.  I let them add the cheese and the pepperoni (they didn’t want anything else), then I threw them in the oven a few minutes and served them up!  They were so proud of their “very own pizzas,” as Gracie said, and ate them all up!  I think that’ll be another fun dinner while Daddy’s away.

Cheesy Crock Pot Chicken Spaghetti and Green Beans

Easy crock pot dinner one night.  And since Grayson could eat mac and cheese every single day, morning, noon, and night, I think this one will be popular!
