Meal Plan Monday

Hello Friends!  I hope everyone had a wonderful weekend and are ready to start out the week on the right foot.  We only have three weeks of school left (WHAT??!!), so that’s what I’m focusing on!  Only two more Mondays after today until summer!!  Anyway, on to the menu for the week…

Spicy Grilled Chicken with Baja Black Beans and Rice

I love a good one pot meal, and except for grilling the chicken, everything else is cooked in a dutch oven on the stovetop.  This will be an easy weeknight dinner with some of my favorite flavors!

Chicken Fried Rice and Steamed Broccoli

I used to make fried rice as a midnight snack way back in mine and Scott’s newlywed days, and it’s still one of my favorite go-to meals.  We usually have everything on hand that you need- rice, an egg, soy sauce, sesame oil, and green onions.  Add in some diced chicken and a side of steamed broccoli, and you have a full meal!  Another easy weeknight dinner.

Grilled Fish Tacos with Mango Jalapeno Slaw and Avocados

We are trying to reduce red meat and incorporate more fish into our diet.  Problem is, Scott is not a big fish eater.  I love seafood and can eat it all day long, but he is a little more picky.  But these fish tacos (off the old blog!) are homeruns in my book.  I’ll use a heavy hand with the blackening seasoning to Scott’s, but I like mine with just a bit, and salt and pepper, so the delicate flavor of the fish can shine through.  I love the slaw in this recipe, which you can eat on the tacos or on the side, and tons of avocado.  Perfect as the weather gets warmer.

Arugula and Prosciutto Pizza

We already had a pizza crust in the freezer and plenty of tomato sauce on hand, so picking up some more cheese at the store was an easy way to prep for another super-simple dinner!  I wanted to add something different to this pizza though, so this time, I’ll be adding some baby arugula and delicious prosciutto to the top!  The arugula and prosciutto top the pizza after it bakes, so they add a crispness and freshness to the pizza.  The kids may just eat the cheese, but that just means more prosciutto for me!

Salmon Cakes with Brussel Sprout, Cranberry and Quinoa Salad

 They may not sound good, and they are certainly not pretty, but salmon cakes are so, so delicious!  Inexpensive, very healthy, and not fishy at all.  I am anxious to try this brussel sprout salad, since I have tried (and failed) to make yummy brussel sprouts a few times.  We’ll see how it goes and how it’s received by the rest of the crew… 🙂
