Hi Friends! I hope you had a great weekend! It was rainy (and rainy, and rainy, and rainy) here, but we had a fun weekend full of good family time. I’m sharing my meals for the week today on Meal Plan Monday, and am pretty pumped about the dinners we’ll be eating this week!
This recipe from my old blog is a family favorite! So simple, just a pizza crust, salsa instead of tomato sauce, taco beef, cheddar cheese, and typical taco toppings instead of pepperoni and the other usual suspects. When I buy frozen pizzas or when we order pizzas for dinner these days, we have to buy/order two pizzas since we have some big-time pizza eaters in the family! But the taco pizza is so filling and has so many delicious additions on top, that one pizza is plenty. Excited for Taco Pizza night this week!
BBQ Pulled Pork Sandwiches, Mac & Cheese, and Green Peas
Scott will be gone a few nights again this week, and this will be an easy go-to when he’s gone. Pork Tenderloins were on sale at my Kroger last week for a super price, and I got three huge tenderloins for $12! So, we grilled one last night for our Sunday dinner, and this pulled pork will use another. I’m going to put it in the crock pot with a bottle of generic barbeque sauce, and let the pork cook all day. By dinnertime it will shread easily, and we’ll slap it between a hamburger bun with a few pickles, and we’ll be good to go! Add Gracie’s favorite side dish (mac and cheese :)), and some peas, and we’ll have an easy dinner.
I have made this before, and it was out of this world. I love lasagna, but all the pasta, and all the cheese, makes it a heavy and time consuming dish. The thinly sliced zucchini is healthier than all the pasta, you don’t have to pre-cook it before you add it to the casserole, and it’s much lighter! It still takes a bit of prep and cooking time, but the result is totally worth the wait. I am not a huge leftovers eater, but mark my word, this won’t last two days in the fridge!
Roasted Pork Tenderloin, Garlic Mushroom Quinoa, and Steamed Broccoli
Here’s where the other tenderloin will come in! I’m going to marinade it in a bit of balsamic vinegar, salt and pepper, and soy sauce, and roast it until it’s cooked through. And we’ve had a couple of wins with quinoa, so I’m anxious to try this Garlic Mushroom Quinoa side dish! I already have the quinoa cooked and in the fridge, so it’ll be easy to whip up since half my work is already done.
I love Mexican food, spicy flavors, and comforting soups, and love that this recipe is all three! And even better, it’s all thrown into the crock pot, to cook all day. Add the yummy avocado, sour cream shredded cheese, and tortilla chips on top, and this will be another easy dinner for a busy week.
