After a fun Spring Break (which I will recap tomorrow :)), I am back with my weekly meal plan post! Our last few weeks have been a little crazy, with Easter and traveling, and Scott being gone a lot, so we haven’t had typical planned out weekly menus for a while. But I am anxious to get back to the plan, since it really does make things easier for me when dinnertime rolls around and it’s time for me to figure out what everyone is going to eat! So here’s what’s on the docket for this week:
Ham and Vegetable Soup
Scott left for Chicago yesterday, and won’t be back until late, late Wednesday night, so I’m planning on keeping the first half of the week pretty simple. We still have a lot of yummy ham leftover from Easter, and need to go ahead and work it into some leftovers. When I was growing up, my grandmother, and then my mom made this amazing ham and vegetable soup with a leftover ham bone, and whatever fresh (or canned) vegetables we had on hand. As simple as it is, it was always one of my favorite things to have for dinner. Real, true comfort food. And it’s supposed to be pretty rainy here this week, so I think it will be perfect.
Don’t these look delicious?! I love meat and all, but I also like the idea of having a few meatless dishes every week to cut back on the grocery bill, and also because I don’t think you have to have meat to create a satisfying entree! I think the black beans and the sweet potatoes in this rice bowl will be so good, and I think I’m going to switch out the rice for quinoa, since we already have it on hand. Top them with some avocado and maybe a little sour cream? I’m looking forward to this one!
Fish Sticks, Mac & Cheese, and Green Peas
Like I said, keeping it easy while Scott’s gone. 🙂 I actually not-so-secretly love fish sticks, so I won’t even mind this quick and easy dinner. The kids love good old Kraft macaroni and cheese, and I’ll add in some peas so at least something in this dinner will be somewhat healthy. 🙂
We have some frozen chicken breasts that I plan on using for this fresh Mexican salad this week. I am so glad that the kids love salads (especially with ranch :)), so I think this will be a winner all around.
Flatbread Pizzas with Kale Salad
I love buying flatbreads from the deli section of my favorite Kroger when they are on sale, because you can make so many good lunches and dinners with them. The kids are always up for pizza, and so all you need to grab along with the flatbreads is pizza sauce/tomato sauce, and some mozzarella cheese. Flatbread Cheese Pizzas, done! I want something to go along side them too, though, so I’m going to replicate a delicious and simple kale salad I had last week when we were in Blue Ridge. It was chopped kale in a simple olive oil and vinegar dressing, a bit of cheese (I’m going to use blue cheese), some slivered almonds, candied walnuts, and craisins. It was SO good, I could’ve eaten a huge bowl of it instead of just a side dish to my pastrami sandwich! So I think I’ll eat a little bit of pizza and a lot of kale salad this time. 🙂
