Meal Plan Monday

Hello Friends!  Hope you had a wonderful weekend!  Here’s what we’ve got on the menu for our dinners this week:

Chicken and Black Bean Tostadas

I love Mexican food, and this weight watchers recipe sounds so good, while not being so heavy!  Plus, I think the kids will like them since they’re like little pizzas!

Sloppy Joes and French Fries

I need a few easy recipes this week since it’s going to be a busy one, so I’m gonna throw together a little Slop-Sloppy Joe dinner and fries and call it a night!

Ham, Hashbrown Casserole, and Green Beans

This whole dinner is based around the deliciousness that is Cracker Barrel’s Hashbrown Casserole.  YUM.  I love dinners that only have one main component that takes a bt of time and actual cooking.  The ham just needs to brown in a frying pan, and the green beans just need to warm in a saute pan, and then dinner is ready!

Chicken Teriyaki Bowls with Coconut Rice

I have never heard of the restaurant “Rumbi,” nor ever had anything from there, but based on all the reviews of this meal, and looking over the recipes, it sounds like a hit to me!  Chicken with Broccoli and Zucchini in a teriyaki sauce, over rice made with red beans and coconut milk sounds amazing, and I can’t wait to try it!

That’s all we’ve got for this week because Scott and I are headed out of town on Friday, and will be going out to eat Friday and Saturday in Savannah!!  We are thrilled to have a bit of an adults-only weekend (even f Scott has to work for a bit of the time), and some delicious Southern food (which, of course, I’ll be sharing!).  What are you eating this week?  You know I love new recipes!
