Meal Plan…Tuesday

Hello Friends!  Due to my exciting news yesterday, I decided to postpone my weekly meal plan schedule until today.  So without further ado, here’s what we’ll be eating this week!

Bacon and Bean Soup and Dinner Rolls 

We were actually going to have this for dinner on Friday night, but sadly, I burnt the shit out of it on the stove.  Ooops.  #keepingtreal  I had it simmering (aka boiling like hell), thinking all was fine (I have had a cold, can’t smell a thing, and it was scorching the bottom of my dutch oven), and I head into the kitchen to check on it, and smoke it literally comes pouring out of the pot on the stove. So, needless to say, we had to chunk it, and ordered pizza for the night (not too shabby, though :)).  But I really did still want to try this out, so we’re going to try it again this week!  I think it really sounds good and was very easy to make (before it and my pot were burned into charcoal bits on the stove). 🙂

Cumin Roasted Chicken and Southwest Pepper Jack Salad with Creamy Avocado Dressing

I read somewhere that lettuce ought to be an afterthought in salad, because of all of the other delicious additions that are so much better.  I tend to agree with that idea.  Scott likes not too much more in his salad but iceburg lettuce and ranch dressing, but I like about 400 ingredients and a splash of dressing.  This salad sounds so wonderful because of all of the additions, and I can’t wait to try it.  Plus the dressing sounds hard to beat.  We’re just going to roast some bone-in chicken breasts and rub them with some chili powder and cumin for some spice, and serve them alongside this salad.  Can’t wait.


Angel Hair Pasta & Chicken Bake with Steamed Broccoli

We haven’t had much pasta (or any?) lately, but I thought this light Weight Watchers pasta bake sounded pretty good.  Throw a green veg on the side and call it a day.  The kids love spaghetti, broccoli, cheese, and chicken, so this dinner should be a win all around!

Grilled Cheese and Tomato Soup

Scott will be gone a few nights this week, so this will be an easy dinner while he’s gone.

Ham, Mac and Cheese, and Green Beans

Another east dinner for the other night Scott’s gone (definitely my go-to simple dinner).

Crockpot Cube Steak and Gravy, Rice and Green Beans

A pretty basic but really, really yummy sounding dinner!  Plus, gravy over rice is always good.  This is definitely a man-pleasing meal.
